Author Catherine's Plates

Ingredients

  • 1 cup All Purpose Flour
  • 2 TBS corn starch
  • 1 1/2 tsp baking powder
  • 1 tsp onion powder
  • 1 tsp Garlic Powder
  • 1-2 tsp cayenne pepper
  • 1/4 tsp Salt
  • 1 cup milk
  • 3-4 onions yellow or white
  • cooking oil I used canola

Instructions

  • In a medium bowl whisk together flour, corn starch, baking powder, onion powder, garlic powder, cayenne pepper, and salt.
  • Add milk and whisk to combine. Batter will be thick.
  • Peel onions whole. Slice into 1/2 or 1 inches. Pull them apart into rings.
  • Prepare oil by pouring around 2 inches of oil into a large skillet or dutch oven. Heat to a medium/medium high (325-350 degrees). A dab of batter added to oil should float and sizzle to be ready.
  • Add a handful of onion rings to batter and move around with a fork to coat evenly. Pull out one at a time and place on a plate.
  • Place enough battered rings into the hot oil to make one layer.
  • Cook until bottoms are golden brown, flip over and cook until golden brown. Will only take a few minutes.
  • Remove onion rings from oil and place on a paper towel lined plate to drain excess grease. Sprinkle with a little salt while rings are still hot. (You an preheat oven to 225 degrees and place rings on a sheet pan to keep warm while completing the rest of batches or to prepare rest of your meal.
  • Enjoy.
