In a medium bowl whisk together flour, corn starch, baking powder, onion powder, garlic powder, cayenne pepper, and salt.
Add milk and whisk to combine. Batter will be thick.
Peel onions whole. Slice into 1/2 or 1 inches. Pull them apart into rings.
Prepare oil by pouring around 2 inches of oil into a large skillet or dutch oven. Heat to a medium/medium high (325-350 degrees). A dab of batter added to oil should float and sizzle to be ready.
Add a handful of onion rings to batter and move around with a fork to coat evenly. Pull out one at a time and place on a plate.
Place enough battered rings into the hot oil to make one layer.
Cook until bottoms are golden brown, flip over and cook until golden brown. Will only take a few minutes.
Remove onion rings from oil and place on a paper towel lined plate to drain excess grease. Sprinkle with a little salt while rings are still hot. (You an preheat oven to 225 degrees and place rings on a sheet pan to keep warm while completing the rest of batches or to prepare rest of your meal.
