Roasted Pork Chops & Sauerkraut Dinner
Comfort food to the max. Roasted Pork Chops, with Sauerkraut, Potatoes & Carrots with simple but delicious flavors.
Equipment
- cutting board & sharp knife
- carrot peeler
- 9 x 13 baking dish
- measuring cups & spoons
- large skillet
- strainer & medium bowl
Ingredients
- 7 TBS butter, cut into pats (DIVIDED)
- 6 large yellow or red potatoes
- 6-7 medium carrots, peeled
- 1 large yellow onion
- 12 oz beef broth
- 1 (32 oz) jar sauerkraut, drained (I use Libby's Barrel Age Taste)
- 8 boneless, center cut pork loin pork chops 1/2 inch thick
- 2 TBS cooking oil, DIVIDED
- salt & black pepper
- dried or fresh chopped parsley for garnish
Instructions
- Preheat oven to 350 degrees. Butter (1 TBS) a 9 x 13 baking dish.
- Scrub potatoes. Cut them in half lengthwise. Then cut into 8 pieces. Place into prepared baking dish cut side down.
- Peel carrots. Remove both ends of carrots. Cut them in half. Cut again lengthwise to make long sticks. Place into baking dish in the middle of the potatoes and on outside of the potatoes.
- Remove both ends of onion and outer layer. Cut onion in half. Then cut onion into chunks. Place onion pieces all over the potatoes and carrots.
- Pour beef broth all over the potatoes, carrots, and onion. Season with salt & pepper on the potatoes, carrots, and onions.
- Evenly place the drained sauerkraut on top of the potatoes, carrots, and onions.
- Heat 1 TBS cooking oil in a large skillet over medium high heat. Salt & pepper the tops of the pork chops. Place 4 pork chops seasoning side down into hot skillet. Season the top side of pork chops. Sear for 4 minutes until golden brown on the bottom. Turn pork chops over and sear an additional 3 or so minutes until golden brown on both sides.
- Place seared pork chops on top of the sauerkraut in baking dish. Add additional 1 TBS oil to skillet and cook remaining pork chops seasoned with salt & pepper.
- Place 6 pats of butter in between the pork chops in baking dish for added flavor.
- Cover baking dish with foil tightly. Cook in preheated oven for 1 1/2 hours. Check potatoes to make sure they are tender along with the pork chops. Place back in oven if needed for an additional 20-30 minutes.
- Sprinkle with dried or fresh parsley for garnish.
