Rocky Road Fudge Candy

Equipment

  • 8 x 8 baking dish
  • non-stick cooking spray
  • parchment paper
  • medium skillet or sauce pan
  • spatula
  • measuring cups & spoons
  • large sharp knife

Ingredients

  • 3 cups semi-sweet chocolate chips
  • 1 (14oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 1 1/2 cups mini marshmallows
  • 1 cup chopped nuts or dry roasted peanuts

Instructions

  • Spray bottom of 8 x 8 baking dish with non-stick cooking spray. Fit a piece of parchment into baking dish.
  • In a medium skillet or sauce pan place semi-sweet chocolate chips & sweetened condensed milk. Turn burner onto a medium low heat. Stir continuously until all chocolate chips have melted.
  • Stir in vanilla extract. Turn off burner. Mix in mini marshmallows and peanuts.
  • Spoon mixture into prepared baking dish and smooth out evenly. Top with more marshmallows and peanuts, pressing them into the fudge mixture.
  • Cover with plastic wrap and refrigerate for 3 hours to set up. Cut into bite size pieces.
