Root Beer Baked Beans with Ground Beef

Equipment

  • 12" cast iron skillet or other skillet same size
  • cutting board & sharp knife
  • measuring cups & spoons

Ingredients

  • 6-8 pieces bacon, cooked to golden brown & crispy, crumbled
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper or poblano, diced
  • 4 cloves garlic, minced
  • 1 lb ground beef
  • 2 (16oz) cans original baked beans with liquid
  • 1 cup favorite root beer
  • 1 cup honey flavored barbeque sauce
  • 1 TBS dijon mustard
  • 1 TBS chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 3 green onions, sliced thin

Instructions

  • Preheat oven to 375 degrees.
  • In a 12" large skillet or cast iron skillet cook bacon until crispy and golden brown. Set aside onto a plate. Leave 3 TBS of bacon grease in skillet.
    NOTE: cast iron skillet will go into oven. If you do not have an oven safe skillet you can use any deep skillet and pour mixture into a greased 9 x 13 baking dish.
  • Add diced bell pepper and onion to skillet. Cook for 2-3 minutes until starting to get softened. Add in garlic and cook an additional 1 minute. Add in ground beef and break it up and brown until no longer pink. Drain excess grease.
  • Stir in root beer, honey barbecue sauce, mustard, chili powder, ground cumin, salt & pepper. Taste to adjust any flavorings.
  • Place in oven for 1 hour.
    NOTE: if you were cooking in a skillet that is not oven safe, pour beans & ground beef mixture into a 9 x 13 baking dish. Spray first with non-stick cooking spray in baking dish.
  • After beans are cooked, top with green onions, & crumbled bacon. Allow to rest for 10 minutes to thicken.
