- In a 12" large skillet or cast iron skillet cook bacon until crispy and golden brown. Set aside onto a plate. Leave 3 TBS of bacon grease in skillet.NOTE: cast iron skillet will go into oven. If you do not have an oven safe skillet you can use any deep skillet and pour mixture into a greased 9 x 13 baking dish.
- Add diced bell pepper and onion to skillet. Cook for 2-3 minutes until starting to get softened. Add in garlic and cook an additional 1 minute. Add in ground beef and break it up and brown until no longer pink. Drain excess grease.
- Stir in root beer, honey barbecue sauce, mustard, chili powder, ground cumin, salt & pepper. Taste to adjust any flavorings.
- Place in oven for 1 hour.NOTE: if you were cooking in a skillet that is not oven safe, pour beans & ground beef mixture into a 9 x 13 baking dish. Spray first with non-stick cooking spray in baking dish.
- After beans are cooked, top with green onions, & crumbled bacon. Allow to rest for 10 minutes to thicken.
