SAUSAGE & APPLE STUFFING

Equipment

  • 9 x 13 baking dish
  • large deep skillet
  • measuring spoons & cups
  • cutting board & sharp knife
  • sheet pan with wire rack
  • bread knife

Ingredients

  • 4-5 cups cubed dried bread
  • 1 lb ground pork sausage
  • 3 ribs celery, diced
  • 2 medium red or green apples, diced
  • 1/2 large yellow onion, diced
  • 1 stick butter (DIVIDED)
  • 2-3 cups chicken broth
  • 1/2 tsp poultry seasoning
  • 1/4 tsp dried sage
  • 1/4 tsp dried rosemary
  • 1/4 tsp black pepper
  • 1/4 tsp salt (or to taste)

Instructions

  • Preheat oven to 350 degrees. Butter a 9 x 13 baking dish.
  • Cube 4-5 cups of bread. Place on a wire rack on a sheet pan. Bake in 300 degree oven for 25-30 minutes until bread has dried out. Remove form oven.
  • Meanwhile, in a large deep skillet brown ground pork sausage and remove to a plate.
  • In same skillet melt 1/2 stick (4 TBS butter) over medium high heat. Add in diced celery, apples, and onion. Cook until all vegetables are softened. Season with poultry seasoning, sage, rosemary, black pepper, and salt to taste.
  • Add browned sausage back to skillet with sauted vegetables. Turn off burner.
  • Add dried bread cubes to sausage and vegetable mixture in large skillet. Pour in 2 cups of broth and 4 oz melted butter and mix until all bread cubes have absorbed the broth. Add more broth if needed.
  • Place stuffing mixture into prepared baking dish and smooth evenly. (Do not press to hard.)
  • Bake in preheated oven covered with foil for 45 minutes. Remove foil & bake an additional 15-20 minutes until top of stuffing is golden and crispy edges.
