In a large skillet over medium high heat brown up sausage. Add in butter and melt. Add in flour and stir for 1 minute.
Slowly stir in milk one cup at a time. Season with salt, pepper, and sage. Stir until thickened. Turn off heat.
Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
Cut each biscuit in to 6 pieces and place into the prepared baking dish. Pour sausage gravy evenly over the biscuits.
In a medium bowl, whisk eggs, milk, and salt & pepper. Pour egg mixture over sausage gravy. Sprinkle cheese evenly over egg mixture.
Place in preheated oven for 35-45 minutes until eggs are set and biscuits are done. Cut into squares.
