Sausage & Potato Foil Packets

A perfect summer time throw on the grill easy clean up dinner idea. You can even throw these in the oven for an easy weeknight meal with easy clean up. So delicious & simple to make.

Equipment

  • 18 inch foil pieces
  • no bowls, mixing utensils, pots needed
  • sheet pan

Ingredients

This recipe makes 4 foil packets

  • 1 lb smoked sausage cut into 1/4 inch rounds (can use kielbasa, turkey sausage or chicken sausage as a substitute)
  • 4 medium red potatoes, washed and diced very small
  • 3 frozen corn cob nibblets; thawed, and cut into 3 pieces
  • 8 TBS butter
  • salt (to taste)
  • black pepper (to taste)
  • garlic powder (to taste)
  • paprika (to taste)
  • 1/2 cup shredded cheddar cheese
  • fresh parsley, for garnish
  • 4 sheets heavy duty aluminum foil (each sheet should measure around 18 inches long)

Instructions

  • Preheat grill to a medium high heat or preheat oven to 400 degrees.
  • Place a sheet of heavy duty foil or 2 sheets of regular foil on surface.
    Divide diced potatoes into 4 servings and place one serving onto each sheet of foil. Sprinkle potatoes with salt & pepper.
    Divide sausage into 4 servings and place one serving on each foil sheet over the potatoes.
  • Place the corn circles into the sides of the potatoes and sausage.
    Place 2 TBS of butter on top of potatoes & sausage. Sprinkle again with salt & pepper. Sprinkle with garlic powder & paprika.
  • Close the foil by bringing the long edge nearest you over the ingredients, then bring the other long edge over the ingredients. Seal the edges together and flatten down sides. Fold each side 3 times and flatten to prevent leakage.
  • For oven, place the 4 packets onto a sheet pan in a single layer with the seam side of foil facing up.
  • Place in preheated oven or grill for 10 minutes. Flip the foil packets over and cook an additional 20-25 minutes until potatoes are cooked through. (You can gently poke packet with a knife and insert through a potato piece to see if done.)
  • Remove packets from oven. Make a large slit across the top and peel back the 4 edges of foil to make an eating vessel. Sprinkle top of sausage and potatoes with cheese and garnish with parsley, if desired.
