Preheat oven to 350 degrees. Spray 2 cake pans (8" or 9") or 1 (9x13) baking dish with nonstick cooking spray. Prepare cakes per instructions on back of box. Divide cake batter between the 2 cake pans or put all batter into your 9x13 baking dish. Bake in preheated oven per instructions on back of cake box. Allow cakes to cool completely.
In a large bowl, beat cream cheese, powdered sugar, and vanilla together using an electric hand mixer or stand mixer until smooth. Add in cool whip and blend together.
On a cake stand or plate, put one cooled cake bottom side up. Place half the cream cheese mixture on cake and smooth out to edges. Place 2nd cake top side up on top of the cream cheese mixture. Smooth rest of cream cheese mixture onto top cake to edges.
Place the pie filling onto cream cheese mixture and push into mixture to hold filling.
Refrigerate 30 minutes to 1 hour to set the pie filling and cream cheese mixture. Enjoy.
