Skillet Fried Potatoes
Fluffy on the inside and Golden Crispiness on the outside.
Equipment
- cast iron or large deep skillet
Ingredients
- 5-7 medium gold potatoes ( you can also use reds or russets) diced into 1/8 – 1/4 inch thick pieces
- 1-2 medium yellow onions diced
- 2 TBS cooking oil (our favorite is avocado oil)
- 1 TBS butter
- 1 tsp salt
- 1 tsp black pepper
- 1 1/2 tsp paprika
- 1 tsp dried rosemary
- 1 1/2 tsp garlic powder
- 1/2 tsp chili powder
- extra oil & butter if needed
Instructions
- Heat a large deep sided skillet or a cast iron skillet to a medium heat. Add cooking oil & butter and allow to come to a sizzle.
- Add in diced potatoes and onions.
- In a small bowl whisk together all seasonings. Pour seasoning mix over potatoes and onions. Stir potatoes, onions, seasoning mix into butter and oil until well coated.
- Place a lid onto skillet and cook for 10 minutes. (Remove lid every few minutes and give the potatoes a mix. This will keep potatoes from sticking to bottom of skillet.)
- After the 10 minutes, remove lid. Stir potatoes. Add additional 1 TBS butter and 1 TBS oil if needed. With lid off cook an additional 10 minutes or more until potatoes are to your doneness. Stir every few minutes.
