Spray a 6 quart oval crockpot with non-stick cooking spray. Place in shredded carrot, diced celery, and diced onion. Add in minced garlic.
Cut chicken into 1/2 inch bite size pieces and place into crockpot on top of vegetables. Season with salt, black pepper, and poultry seasoning. Pour chicken broth on top. Mix everything together well.
Place lid on crockpot and cook on low for 5-6 hours or on high for 2.5 – 4 hours. Chicken should be cooked through and tender. Vegetables should be tender.
Whisk in corn starch into 3 TBS of water and pour ;into crockpot. Add in heavy whipping cream and the potato gnocchi. Stir well to combine. Place lid back on and cook an additional 25 minutes on high.
Stir in fresh spinach and parmesan cheese. Spoon into bowls. Garnish with additional parmesan cheese, if desired.
