Slow Cooker Chicken & Gnocchi Soup, Olive Garden Copycat Recipe

Ingredients

  • 3 boneless, skinless chicken breasts
  • 3 medium carrots, peeled & shredded with a box grater
  • 2 medium celery ribs, diced
  • 1/2 medium yellow onion, diced
  • 2 garlic cloves, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 4 cups chicken broth
  • 1 tsp poultry seasoning
  • 2 cups heavy whipping cream
  • 1 TBS corn starch
  • 1 (16oz) package potato gnocchi
  • 3 oz fresh spinach
  • 1 cup parmesan cheese, shredded

Instructions

  • Spray a 6 quart oval crockpot with non-stick cooking spray. Place in shredded carrot, diced celery, and diced onion. Add in minced garlic.
  • Cut chicken into 1/2 inch bite size pieces and place into crockpot on top of vegetables. Season with salt, black pepper, and poultry seasoning. Pour chicken broth on top. Mix everything together well.
  • Place lid on crockpot and cook on low for 5-6 hours or on high for 2.5 – 4 hours. Chicken should be cooked through and tender. Vegetables should be tender.
  • Whisk in corn starch into 3 TBS of water and pour ;into crockpot. Add in heavy whipping cream and the potato gnocchi. Stir well to combine. Place lid back on and cook an additional 25 minutes on high.
  • Stir in fresh spinach and parmesan cheese. Spoon into bowls. Garnish with additional parmesan cheese, if desired.

  • Catherine this Gnocchi soup is incredible and taste delicious. Had to leave out the Spinach though and it still was wonderful. You make amazing recipes and I watch you everyday. Keep up the great recipes Catherine. Thanks for all the yummy stuff!
