Heat 3 TBS of cooking oil in a large deep skillet over medium high heat until it starts to shimmer.
Salt & pepper both sides of pork chops. Using a fork or a meat tenderizer, poke holes into pork chops.
Place pork chops into hot oil and sear for 3-4 minutes until golden brown on one side. Flip pork chops over and cook an additional 3-4 minutes until golden brown on other side.
Remove seared pork chops to a plate and set aside. Sear remaining pork chops and remove from pan. Turn off burner.
In bottom of crockpot whisk together lipton onion soup mix and beef broth.
Place 1 TBS of brown sugar onto each pork chop and smooth evenly. Sprinkle minced garlic onto the brown sugar.
Place pork chops into crockpot on top of the soup mixture.
Place lid on crockpot. Cook on high for 3 1/2 -4 hours or on low for 6-7 hours. It all depends on the size of the pork chops. Make sure they are fork tender before serving. Garnish with fresh parsley if desired.
