Slow Cooker Honey Garlic Chicken Spaghetti

Equipment

  • 1 (6 quart) slow cooker/crockpot
  • medium mixing bowl
  • whisk
  • measuring cups & spoons
  • large pot with strainer
  • non-stick cooking spray

Ingredients

  • 2-3 lbs boneless, skinless whole chicken breasts
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder

Garlic Honey Sauce

  • 2/3 cup low sodium soy sauce
  • 2/3 cup honey
  • 2 TBS minced garlic
  • 1 TBS minced ginger
  • 1 TBS hoisin sauce
  • 1/4 tsp crushed red pepper flakes (optional) or sriracha
  • 1 cup chicken broth
  • 1 TBS corn starch
  • 2 TBS water
  • 12 oz spaghetti, cooked & drained per package instructions
  • green onions, sliced or chives

Instructions

  • Spray a 6 quart slow cooker with non-stick cooking spray. Place chicken breast in a single layer in slow cooker. Season with salt, black pepper, garlic powder, and onion powder. Flip chicken over and season with salt, black pepper, garlic powder, and onion powder.
  • In a medium bowl whisk together soy sauce, honey, minced garlic, minced ginger, hoisin sauce, crushed red pepper flakes (opt), and chicken broth.
    In a small bowl whisk together corn starch and water. Pour into mixture in medium bowl and stir together.
  • Pour mixture all over chicken. Place lid on slow cooker and cook on high for 4 hours or on low for 7 hours. (Timing depends on size of chicken; make sure to check for doneness and tenderness.)
  • Cook spaghetti per directions on back of package until al dente or until desired tenderness is achieved. Drain.
  • Shred chicken in slow cooker with 2 forks or a meat chopper. Add in cooked, drained spaghetti and stir to combine. Let sit for a few minutes. Garnish with chopped green onions, or chives.
