Slow Cooker Tuscan Chicken
Italian Flavored Dish, Creamy Sauce

Ingredients
Preparing Chicken
- 3-4 boneless, skinless chicken breasts
- 1/4 tsp (each) of salt, black pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning DIVIDED
- 2 TBS cooking oil
Preparing Sauce
- 1 cup heavy whipping cream
- 1 TBS corn starch
- 2 tsp minced garlic
- 1/4 tsp (each) of salt, black pepper, garlic powder, onion powder, smoked paprika, and Italian seasoning
- 1/4 cup shredded parmesan cheese
- 2 roasted red bell peppers from a jar, diced
- 4 oz fresh spinach
Instructions
To get the roasted chicken flavor for Tuscan Chicken, sear chicken first for that golden brown color.
- Take a fork and make lots of wholes through out the chicken breasts. Sprinkle salt, black pepper, garlic powder, onion powder, paprika, and Italian seasoning on both sides of chicken.
- Heat oil over medium high heat in a large skillet. Place seasoned chicken in skillet. Sear for 2-3 minutes until golden brown, flip chicken over, and sear an additional 2-3 minutes until golden brown.
- Spray a 6 quart slow cooker with non-stick cooking spray. Place seared chicken in bottom of slow cooker.
- In a medium bowl whisk together heavy whipping cream, corn starch, garlic, seasonings listed for use in sauce, parmesan cheese, and diced red peppers.
- Pour sauce all over chicken in slow cooker. Place lid on slow cooker and cook for 3-4 hours on high or 5-6 hours on low until chicken is cooked through at 165 degrees and more. Should be fork tender.
- Place fresh spinach in slow cooker and mix with sauce. Place lid on for 5 minutes to soften spinach. Serve over cooked rice, pasta, or mashed potatoes.
Can I skip the spinach?
Yes, you can add kale or broccoli if you want.
