Smores Easy Baked Mini Hand Pies

A delicious and fun way to make dessert using your favorite Smores ingredients.

Equipment

Ingredients

  • 1 box refrigerated pie crust dough (2 pack)
  • 1/2 cup graham crackers, crushed
  • 1/4 cup white granulated sugar
  • 4 TBS butter melted

Marshmallow filling

  • 1/2 cup marshmallow creme from a jar
  • 2 TBS cream cheese, softened
  • 2 TBS white granulated sugar
  • 1/2 cup chocolate cips

Instructions

  • Preheat oven to 425 degrees. Line a sheet pan with parchment paper.
  • Unroll one pie crust dough and cut out (8) 3 inch circles placing on the lined sheet pan.
  • In a shallow dish mix together crushed graham crackers and sugar.
  • Brush top side of each 3 inch circle of dough. Place butter side down into graham cracker and sugar mixture pressing into it. Place circle of dough back onto sheet pan with graham cracker butter side down. Complete the rest of the 7 circles.
  • In a medium or small bowl mix together with a fork the marshmallow creme, cream cheese and 2 TBS of white granulated sugar. Fold in chocolate chips. Place a full TBS of mixture onto each center of dough circles that are on the sheet pan. Sprinkle with 1/2 tsp of graham cracker crumb mixture. (be sure to keep some edging around the circles clear of mixture for ease of crimping them closed.)
  • Take the other pie crust dough sheet and cut 8 more circles out. Place each circle on top of the filled circles on the sheet pan. Taking a fork crimp the top dough circle into the bottom dough circle creating a sealed edging all the way around.
  • Brush melted butter on top of each hand pie. Sprinkle or press graham cracker mixture on top of the butter.
  • Bake for 15-17 minutes until golden brown. Serve warm or at room temperature. Store leftovers in refrigerator.
