Smothered Chicken Burritos

A delicious Tex Mex Flavored Burritos smothered in a creamy white sauce. The burrito starts off with a fantastic flavored crockpot Mexican Chicken. You gotta give these a try.

Equipment

  • large sheet pan with a wire rack
  • Medium sauce pan

Ingredients

  • 6-8 Burrito size flour tortillas
  • 4 cups cooked chicken (try my Mexican Chicken in the Crockpot recipe, it's so delicious in this recipe)
  • 2 cups cheddar cheese shredded, or other blend

White Creamy Sauce

  • 3 TBS butter
  • 1 TBS cooking oil
  • 4 TBS flour
  • 2 cups chicken broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3/4 tsp ground cumin
  • 1/2 cup sour cream
  • 2 oz diced green chilis or 1/4 cup salsa verde
  • 1/2 cup shredded cheddar cheese
  • Garnish with sour cream, pico, cilantro, olives or other choice topping.

Instructions

  • Preheat oven 400 degrees. Line a large sheet pan with foil. Place a wire rack onto sheet pan.
  • Lay out 1 burrito size tortilla, place 1/4 – 1/2 cup shredded chicken drained of juice, sprinkle with 1/4 cup of shredded cheese. (all in the center of the tortilla)
  • Roll tortilla by tucking in sides and roll edge closest to you over the filling and tuck under filling and keep rolling to make it look like a burrito.
  • Place on the wire rack that's on the prepared sheet pan. Finish preparing the rest of the burritos. Brush each burrito with cooking oil on top, bottom and sides (or you can spray the burritos top, bottom and sides with a non-stick cooking spray).
  • Place pan in preheated oven and bake for 18-20 minutes until golden. Place oven on broil if needed for an additional 2 minutes to crisp the top of burritos. Remove from oven.

Making the Sauce

  • You can start making the sauce when the burritos are 1/2 way done.
  • In a medium skillet bring butter and 1TBS of oil to a sizzle over medium heat. Whisk in flour & seasonings for 1-2 minutes. Reduce heat and whisk in chicken broth slowly. Simmer 2-3 minutes until thickened a little.
  • Turn off heat stir in green chilis or salsa verde, cheese and sour cream.
  • Serve over baked burritos. Garnish with desired toppings.
