Southern Pasta Salad

Ingredients

  • 1 lb uncooked pasta
  • 2 eggs
  • 2 celery stalks
  • 1/2 red onion (or any type of onion)
  • 1 cup bell peppers or sweet peppers
  • 1 cup mayonnaise
  • 1/4 cup Sour Cream
  • 2 TBS sweet relish +2 TBS of juice for dressing
  • salt & pepper to taste
  • 1 tsp mustard
  • 1/4 tsp Garlic Powder

Instructions

  • Fill a large pot with water. Place 2 eggs into the pot. Salt
  • Place eggs into water. Sprinkle a little salt onto eggs to prevent cracking and sprinkle a little more into the water. (The eggs will cook 5-5-5 which is 5 minutes coming to a boil, 5 minutes in the boil, and 5 minutes in a water/ice bath. The water/ice bath will stop the eggs from cooking and cool the eggs down.
  • Bring water to a boil. Add pasta in boiling water and cook per instructions on package. (You can use whichever pasta you have on hand). Drain pasta and run under cool water to stop the cooking process and to cool off the pasta.
  • Dice up onion, celery, and peppers.
  • In a large bowl place cooled pasta and diced vegetables. Chop up hardboiled eggs and place with pasta. Add sweet relish,
  • In small bowl coming mayonnaise, sour cream, relish juice, mustard, pepper, salt, garlic powder. Mix well.
  • Pour over pasta. Mix all ingredients to combine well.
