Equipment

  • large deep skillet

Ingredients

This recipe is for 4 sandwiches

  • 2 cube steaks, cut in half
  • 1 medium yellow onion, sliced thin
  • 3 TBS butter
  • 1 TBS steak sauce
  • salt & pepper, to taste
  • 6 large eggs
  • 2 TBS milk
  • salt & pepper, to season eggs
  • 4 bagels, toasted
  • mayonnaise, for bagels
  • butter, for bagels
  • 4 slices American cheese

Instructions

  • In a large deep skillet over medium high heat, add butter and onions. Season with salt & pepper. Saute for 3-4 minutes until softened and slightly browned. Push onions to one side of the pan and add an additional TBS of butter and melt on the empty side of pan.
  • Cut cube steaks in half to equal 4 parts. Sprinkle with salt & pepper. Drizzle steak sauce over steaks. Place steaks season side down on the melted butter in skillet. Season the top side now with salt & pepper. Cook for 3-4 minutes until browned. Flip over the steaks, mix in the onions, and cook an additional 4-5 minutes until the steaks are browned and no longer pink in the middle.
Remove steaks and onions from skillet onto a plate and cover with foil to keep warm.

To cook Eggs

  • In same skillet heat an additional 2 TBS butter. In medium bowl, whisk eggs, milk, salt, and pepper to taste. Pour egg mixture into hot skillet over melted butter. Let set for 30 seconds and start pulling the eggs toward the center of skillet using spatula. Pull the wet eggs into the empty spaces in skillet to cook. Divide eggs into 4 sections and flip over. Turn off heat and place one pieces of cheese on top of each egg section and allow to melt.
NOTE: This will give you a solid sheet of egg to help sit on your bagel instead of crumbled scrambled eggs.
  • Toast bagels. On bottom toasted bagel slice spread with mayonnaise. Place one piece of steak and some onions on top of the mayonnaise. Top with one egg section with melted cheese. Butter top portion of toasted bagel and place it on top of the egg. Cut bagel sandwich in half and enjoy.
