Strawberry Crumble Bars

- 1 8 x 8 baking dish

Ingredients
crumble mixture
- 1/2 cup white granulated sugar
- 1 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup cold butter, cut into small cubes
- 1 egg, beaten
- 1 tsp vanilla extract
Strawberry Layer
- 1 lb fresh strawberries, chopped into quarters
- 1/3 cup white granulated sugar
- 2 tsp cornstarch
Instructions
- Preheat oven to 375 degrees. Spray 8 x 8 baking dish with non-stick cooking spray on the bottom and sides. Fit a pieces of parchment into baking dish allowing some to hang over the 2 sides of the dish. Set aside.
- In a medium bowl whisk together flour, 1/2 cup white granulated sugar, baking powder, and salt. Place the cubed cold butter all over the flour mixture. Using a pastry cutter, cut the butter into the flour until small pieces form.NOTE: you can also use a food processor for this step for a speedier process.
- Mix in beaten egg and vanilla extract until pea shaped dough crumble forms.
- Place 1/2 of the crumble mixture into bottom of prepared baking dish and pat down evenly.
- In a medium bowl place chopped strawberries, 1/3 cup granulated sugar, and cornstarch. Mix until all combined. Pour strawberry mixture over the bottom layered crust.Sprinkle the rest of the crumble mixture loosely on top of the strawberry layer.
- Bake in preheated oven for 35-45 minutes until top is golden brown and bottom is cooked through.Cool completely before cutting bars into square shapes.NOTE: refrigerate to cool helps set up the bars. Enjoy.
