Strawberry Crumble Bars

Equipment

  • 1 8 x 8 baking dish
  • medium bowls

Ingredients

crumble mixture

  • 1/2 cup white granulated sugar
  • 1 1/2 cups all purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup cold butter, cut into small cubes
  • 1 egg, beaten
  • 1 tsp vanilla extract

Strawberry Layer

  • 1 lb fresh strawberries, chopped into quarters
  • 1/3 cup white granulated sugar
  • 2 tsp cornstarch

Instructions

  • Preheat oven to 375 degrees. Spray 8 x 8 baking dish with non-stick cooking spray on the bottom and sides. Fit a pieces of parchment into baking dish allowing some to hang over the 2 sides of the dish. Set aside.
  • In a medium bowl whisk together flour, 1/2 cup white granulated sugar, baking powder, and salt. Place the cubed cold butter all over the flour mixture. Using a pastry cutter, cut the butter into the flour until small pieces form.
    NOTE: you can also use a food processor for this step for a speedier process.
  • Mix in beaten egg and vanilla extract until pea shaped dough crumble forms.
  • Place 1/2 of the crumble mixture into bottom of prepared baking dish and pat down evenly.
  • In a medium bowl place chopped strawberries, 1/3 cup granulated sugar, and cornstarch. Mix until all combined. Pour strawberry mixture over the bottom layered crust.
    Sprinkle the rest of the crumble mixture loosely on top of the strawberry layer.
  • Bake in preheated oven for 35-45 minutes until top is golden brown and bottom is cooked through.
    Cool completely before cutting bars into square shapes.
    NOTE: refrigerate to cool helps set up the bars. Enjoy.
