Stuffed Peppers One Skillet Meal – Low Carb

This Low Carb recipe loses no flavor from the original stuffed peppers recipe. Much easier to put together too all in one skillet.

Equipment

  • large deep skillet with lid
  • measuring spoons & cups
  • spatula
  • cheese shredder

Ingredients

  • 1 lb lean ground beef
  • 1 cup yellow onion, diced
  • 2 garlic cloves, minced
  • 2 medium bell peppers, any color, diced (green, orange, yellow, red)
  • 1 cup uncooked long grain white rice
  • 2 cups unsalted beef broth
  • 1 (24oz) jar marinara sauce (your favorite brand)
  • 1/2 cup shredded white cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • 1 tsp dried parsley (for garnish)

Instructions

  • In a large deep skillet brown ground beef and drain excess fat. Add in onion & bell pepper and cook until slightly softened. Stir in garlic for 1 minute.
  • Season with the garlic powder, onion powder, oregano, black pepper, and salt.
  • Stir in rice, beef broth, and marinara sauce. Bring to a boil over high heat.
  • Lower heat, place lid on skillet and simmer on low for 15-20 minutes until rice is tender and most of the liquid has been absorbed.
  • Sprinkle cheese on top. Garnish with parsley.
