

Stuffed Peppers One Skillet Meal – Low Carb
This Low Carb recipe loses no flavor from the original stuffed peppers recipe. Much easier to put together too all in one skillet.
Equipment

- large deep skillet with lid
- measuring spoons & cups
- spatula
- cheese shredder
Ingredients
- 1 lb lean ground beef
- 1 cup yellow onion, diced
- 2 garlic cloves, minced
- 2 medium bell peppers, any color, diced (green, orange, yellow, red)
- 1 cup uncooked long grain white rice
- 2 cups unsalted beef broth
- 1 (24oz) jar marinara sauce (your favorite brand)
- 1/2 cup shredded white cheddar cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/4 tsp black pepper
- 1/4 tsp salt
- 1 tsp dried parsley (for garnish)
Instructions
- In a large deep skillet brown ground beef and drain excess fat. Add in onion & bell pepper and cook until slightly softened. Stir in garlic for 1 minute.
- Season with the garlic powder, onion powder, oregano, black pepper, and salt.
- Stir in rice, beef broth, and marinara sauce. Bring to a boil over high heat.
- Lower heat, place lid on skillet and simmer on low for 15-20 minutes until rice is tender and most of the liquid has been absorbed.
- Sprinkle cheese on top. Garnish with parsley.
