

Summertime Peach Crisp
Fresh Juicy Peaches with a delicious crispy topping baked golden brown.
Equipment
- large pot
- slotted spoon
- 2 large bowls
- parring knife
- cutting board
- 8 x 11 or 9 x 9 baking dish
Ingredients
- 6-8 medium peaches
- 1 stick (1/2 cup) butter cut into pats, frozen
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1 cup rolled old fashioned oats
- 1 tsp ground cinnamon
- 1/2 tsp salt
Instructions
- Bring a large pot of water to a boil. Wash peaches. Using a parring knife (small sharp knife) cut an "x" shape through the bottom of each peach. Place peaches carefully into the boiling water for 1 minute. Remove peaches to a large bowl of ice water.NOTE: use a spider utensil or a large slotted spoon to ease the peaches in and out of the boiling water.NOTE: the ice water will help stop the cooking process and loosen skin for easy removal.
- Using the parring knife pull the skin off of the peach starting at the bottom where the "x" is. Cut the pealed peach in half all around the pit. This will create 2 halves of the peach. Remove the pit. Cut the halves into slices.
- Butter an 8 x 11 or 9 x 9 baking dish. Place the slices of peaches into prepared baking dish.
- In a large mixing bowl mix together flour, brown sugar, oats, cinnamon, and salt together. Add in the frozen butter pats. Blend together to form a crumbled mixture.NOTE: you can use a pastry cutter, fork, 2 knives or your clean hands to form the crumble.
- Place the crumbled mixture all over the peaches. Pat down the mixture evenly.
- Place in 350 degree preheated oven for 30-40 minutes until golden brown. Serve warm with ice cream or whipped topping.
