Swedish Meatball Meatloaf

Equipment

Ingredients

Meatloaf Mixture

  • 2 lbs ground beef
  • 1 lb ground pork
  • 2 TBS melted butter
  • 2 large eggs
  • 1 medium yellow onion, diced small
  • 1 cup original bread crumbs (or panko crumbs)
  • 1 cup prepared mashed potatoes
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp allspice

Gravy

  • 6 TBS butter
  • 6 TBS all-purpose flour
  • 4 cups beef broth
  • 1 tsp Worcestershire sauce
  • 1 tsp soy sauce
  • 1/4 tsp ground nutmeg
  • salt & black pepper, to taste
  • 8 oz sour cream
  • fresh parsley, chopped

Instructions

  • Preheat oven to 350 degrees. Line a large edged sheet pan with foil.
  • In a large mixing bowl place all meatloaf mixture ingredients. Mix well to combine.
    NOTE: I use a stand mixer to combine everything.
  • Place mixture onto prepare sheet pan and free form into an oval shape about 3 inches high. Pack it solid. Bake in preheated oven for 1 hour and 15 minutes until cooked through. Let sit for 10 minutes.
  • Right before meatloaf comes out of oven, start your gravy.
  • In a deep skillet over medium high heat melt butter. Stir in flour for 1 minute. Slowly add in beef broth while whisking to break up any lumps from flour. Season with Worcestershire sauce, soy sauce, salt, pepper, and nutmeg. Put burner to a high heat to bring to a boil. Let simmer until reduced in liquid and has sauce has thickened a little. Season with salt & pepper to taste, if needed.
  • Turn off heat. Stir in sour cream.
    NOTE: stir in a slurry of 2 TBS corn starch and 2 TBS water if needed to thicken more.
  • Pour gravy over sliced meatloaf & garnish with fresh parsley. We love this with my Smashed Brussel Sprouts recipe. Enjoy.
