Preheat oven to 350 degrees. Line a large edged sheet pan with foil.
In a large mixing bowl place all meatloaf mixture ingredients. Mix well to combine. NOTE: I use a stand mixer to combine everything. Place mixture onto prepare sheet pan and free form into an oval shape about 3 inches high. Pack it solid. Bake in preheated oven for 1 hour and 15 minutes until cooked through. Let sit for 10 minutes.
Right before meatloaf comes out of oven, start your gravy.
In a deep skillet over medium high heat melt butter. Stir in flour for 1 minute. Slowly add in beef broth while whisking to break up any lumps from flour. Season with Worcestershire sauce, soy sauce, salt, pepper, and nutmeg. Put burner to a high heat to bring to a boil. Let simmer until reduced in liquid and has sauce has thickened a little. Season with salt & pepper to taste, if needed.
Turn off heat. Stir in sour cream.NOTE: stir in a slurry of 2 TBS corn starch and 2 TBS water if needed to thicken more. Pour gravy over sliced meatloaf & garnish with fresh parsley. We love this with my Smashed Brussel Sprouts recipe. Enjoy.
