Tater Tot Meatloaf Casserole
The Perfect Casserole, so Delicious and Very Easy to Make.
Equipment
- 9 x 13 baking dish
- large mixing bowl
Ingredients
Glaze
- 1 cup ketchup
- 1 cup favorite barbecue sauce
- 2 TBS brown sugar
- 2 tsp yellow mustard
Meatloaf Mixture
- 2 lbs lean ground beef
- 1 cup ritz cracker crumbs (or other type of cracker)
- 2 large eggs
- 1/4 cup milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 1 TBS dried parsley
- 1 tsp Worcestershire Sauce
Toppings
- 2 lb bag frozen tater tots
- 2 cups shredded cheddar cheese
- 2-3 green onions sliced for garnish
Instructions
- Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
Making the Glaze
- In a medium bowl whisk together glaze ingredients (ketchup, barbecue sauce, mustard and brown sugar. Set aside.
Making Meatloaf
- In a large bowl mix together meatloaf ingredients listed (ground beef, cracker crumbs, eggs, milk, salt, pepper, paprika, onion powder, garlic powder, parsley and Worcestershire Sauce). Mix in 1/3 – 1/2 of the prepared glaze.
- Place meatloaf mixture into prepared 9 x 13 baking dish and press evenly. Spread remaining glaze evenly over meatloaf mixture.
- Lay the tater tots in a single layer over top of glaze to cover entirely.
- Sprinkle shredded cheese over the tater tots.
- Cover baking dish with foil. (Spray inside of foil with non-stick cooking spray to keep cheese from sticking to foil.) Bake for 30-35 minutes. Remove foil and bake an additional 40-45 minutes until meatloaf is cooked through. Allow to rest 5-6 minutes before slicing. Garnish with green onions.

Yes, this will work. If you freeze raw freeze the whole thing. If you cook it first wrap and freeze as individual pieces.
