Thumbprint Cookies

Ingredients

  • 1 cup unsalted butter room temperature
  • 2/3 cup granulated sugar
  • 1 egg yolk
  • 1 tsp Vanilla Extract
  • 2 1/4 cups All Purpose Flour
  • 1/2 tsp Salt
  • jams or jellies

Instructions

  • Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
  • Beat together butter and sugar with an electric mixer on medium high until light and fluffy (2-3 minutes). Beat in egg yolk and vanilla extract.
  • Add flour and salt and continue mixing until thoroughly mixed and dough forms a balls.
  • Form 1 inch dough balls and place onto baking sheet. Flatten balls slightly with your thumb or the back of a spoon. (I used a melon baller).
  • Place 1 tsp of jelly or jam into indention of each cookie.
  • Bake cookies for 8 to 10 minutes until bottoms are a nice golden brown.
  • Cool cookies. Serve and enjoy.
