Thumbprint Cookies

- 1 cup unsalted butter room temperature
- 2/3 cup granulated sugar
- 1 egg yolk
- 1 tsp Vanilla Extract
- 2 1/4 cups All Purpose Flour
- 1/2 tsp Salt
- jams or jellies
Preheat oven to 375 degrees. Line a baking sheet with parchment paper.
Beat together butter and sugar with an electric mixer on medium high until light and fluffy (2-3 minutes). Beat in egg yolk and vanilla extract.
Add flour and salt and continue mixing until thoroughly mixed and dough forms a balls.
Form 1 inch dough balls and place onto baking sheet. Flatten balls slightly with your thumb or the back of a spoon. (I used a melon baller).
Place 1 tsp of jelly or jam into indention of each cookie.
Bake cookies for 8 to 10 minutes until bottoms are a nice golden brown.
Cool cookies. Serve and enjoy.
