Waldorf Salad

Equipment

  • large mixing bowl
  • sharp knife

  • measuring spoons & cups

Ingredients

  • 2 ribs celery, diced (1 cup)
  • 2 ambrosia apples, diced (1 cup) any flavor apple you like
  • 1 cup grapes, halved
  • 1/4 cup parsley, chopped
  • 2 cups walnuts, pan roasted
  • 1 cup mayonnaise
  • 1 cup yogurt, plain flavor
  • 1 TBS white granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp poppy seeds
  • romaine heart lettuce

Instructions

  • In a large bowl mix together diced celery, diced apples, halved grapes, chopped parsley, roasted walnuts.
    NOTE: to roast walnuts, heat skillet over medium heat. Place walnuts in skillet and toss them around for 1-2 minutes until heated through and you can smell the walnuts. Don't heat to long, you don't want to scorch them.
  • In a medium bowl, whisk together mayonnaise, yogurt, sugar, salt & pepper and poppy seeds. Pour mixture into mix fruit and nuts. Mix together until fully coated.
  • Presentation with Waldorf Salad generally consists of spooning mixture into the center of romaine hearts lettuce. Or chop up romaine and place into large serving platter and spoon mixture in the center of the lettuce.
