Mexican Corn Dip Recipe

Ingredients

  • 3 (11oz) cans MexiCorn, drained

NOTE: can substitute 30oz of canned whole kernel corn if unable to find MexiCorn.

  • 1 (4oz) can chopped green chilies
  • 3-4 Jalapeno peppers (seeded, deveined, washed and chopped)
  • 3 small green onions (chopped)
  • OPTIONAL: green bell peppers or sweet peppers diced
  • 10 oz grated cheddar cheese
  • 1 cup sour cream
  • 1 cup Hellman's Mayonnaise
  • 1 tsp white granulated sugar
  • 1 tsp garlic powder
  • paprika (garnish on top)
  • 1 bag Frito Lay Scoops Corn Chips
  • 1/4 tsp salt, or to taste
  • 1/4 tsp black pepper, or to taste

Instructions

  • In serving bowl mix together, corn, green chilies, jalapeno peppers, sweet peppers & bell peppers, cheddar cheese, sour cream, mayonnaise, sugar, garlic, salt & pepper.
  • Chill in refrigerator. Sprinkle with paprika before serving.
  • Best if served with Frito Lay Scoops Corn Chips.
