Easy Frosted Banana Cake
Made easy using Box cake mix and very ripe bananas. The frosting only has 2 ingredients, one of which is Jell-O Instant Pudding. It's such a light & refreshing cake perfect for summer.

- 1 (15.25oz) box white cake mix
- plus ingredients listed on back of box (you can substitute milk in place of water and melted butter in place of the oil for more bakery style cake).
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 3 medium very ripe bananas, mashed up
Frosting
- 1 (5oz) box vanilla flavored Jell-O instant pudding mix
- 1 1/2 cups cold milk
- 1 cup heavy whipping cream
While cake is cooking start making the pudding part of the frosting.
In a medium bowl whisk together pudding and milk (listed in ingredients for the pudding). NOTE: do not use the amount listed on back of pudding box as that will be too much milk for this recipe.
Place pudding in refrigerator until cake has cooled.
In a small bowl whisk heavy whipping cream until soft peaks have formed. Fold whipped topping into set pudding until well combined.NOTE: we are not adding any sweetener to the whipping cream, since the pudding is already sweet. Frost cooled cake evenly. Enjoy.
