Easy Frosted Banana Cake

Made easy using Box cake mix and very ripe bananas. The frosting only has 2 ingredients, one of which is Jell-O Instant Pudding. It's such a light & refreshing cake perfect for summer.

Equipment

Ingredients

  • 1 (15.25oz) box white cake mix
  • plus ingredients listed on back of box (you can substitute milk in place of water and melted butter in place of the oil for more bakery style cake).
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 3 medium very ripe bananas, mashed up

Frosting

  • 1 (5oz) box vanilla flavored Jell-O instant pudding mix
  • 1 1/2 cups cold milk
  • 1 cup heavy whipping cream

Instructions

  • Preheat oven to 350 degrees. Spray with cooking spray and dust with flour a 9" x 13" baking dish.
  • In a large bowl mix together with a whisk or electric hand mixer for 2 minutes dry cake mix, ingredients listed on back of cake mix box, baking soda, salt, cinnamon, nutmeg, and mashed bananas.
    NOTE: don't forget you can switch out milk for the water, and melted butter for the oil as an option for a more bakery style cake.
  • Pour cake batter into prepared baking dish and bake in preheated oven for 40 – 45 minutes.
    NOTE: this is a very wet batter and will need the full time. Cake should be golden brown, pulling away from sides of dish, and a toothpick inserted into middle of cake should come out clean (or a few dry crumbs is fine). Cool cake completely.

While cake is cooking start making the pudding part of the frosting.

  • In a medium bowl whisk together pudding and milk (listed in ingredients for the pudding). NOTE: do not use the amount listed on back of pudding box as that will be too much milk for this recipe.
  • Place pudding in refrigerator until cake has cooled.
  • In a small bowl whisk heavy whipping cream until soft peaks have formed. Fold whipped topping into set pudding until well combined.
    NOTE: we are not adding any sweetener to the whipping cream, since the pudding is already sweet.
  • Frost cooled cake evenly. Enjoy.
