Preheat oven to 400 degrees. Line baking sheet with parchment paper and spray with non stick cooking spray.
In a small bowl combine yeast and warm water and set aside to proof. (5 minutes)
In a large bowl using a whisk combine, all purpose flour, cake flour, baking powder, salt and sugar.
Cut COLD shortening into flour mixture until small pea size.
Pour in buttermilk and proofed yeast mixture.
Stir gently until just combined.
Turn dough out onto lightly floured surface, form ball and then roll out until about 1/2 inch high.
Cut into 3 inch circles and place them on prepared baking sheet.
Brush tops lightly with milk to help with browning.
Bake for 15-20 minutes, or until golden brown and puffy.
