Add the dry ingredients slowly into the wet ingredients. Mix well. Using a wooden spoon mix in the diced apples until well coated.
Heat oil in a large pot or deep skillet to a medium high or 350 degrees. Once oil is heated to temperature, using a 1/3 measuring cup, drop batter into skillet giving them room to fry up.TIP: place the back end of a wooden spoon to the bottom of pot with hot oil and it should sizzle if it's to temperature. Cook a few minutes on one side until golden brown and flip over. Cook an additional few minutes until golden brown.TIP: Cook in batches to keep oil at temperature. Remove fritters and place onto a wire rack placed on a foil lined sheet pan. This will help drain any excess grease. Once all fritters are fried, turn off burner and allow fritters to cool before glazing.
Making Glaze
In a large measuring cup whisk together powdered sugar, vanilla and milk until smooth. (Add more milk for a thinner consistency or add more powdered sugar to thicken, if needed.)
Drizzle glaze over the cooled fritters allow glaze to set up a few minutes and then enjoy.
