Banana Bread Cookies
6 Ingredient quick treat using very ripened and sad looking bananas. Makes 12 cookies.

- 1 medium very ripe banana
- 1/4 cup melted butter
- 1/2 cup white granulated sugar
- 1 cup all-purpose flour
- 1/4 tsp baking soda
- 1/4 tsp salt
- opt (1/2 cup chopped nuts or chocolate chips)
Preheat oven to 350 degrees. Line sheet pan with parchment paper and set a aside.
In large mixing bowl mash up 1 very ripe banana until smooth and no lumps show.
With a whisk mix in melted butter in with the mashed banana. Add in sugar and mix well until creamy.
Sift in flour, baking soda, and salt into the banana mixture. Fold in using a spatula.
Optional step: Fold in nuts or chocolate chips as an add-in, if desired.
Scoop batter onto lined sheet pan using a 1 1/2 inch cookie scoop or a large TBS. Leave space in between cookie batter mounds.
Bake in preheated oven for 8-10 minutes or until cookies are crisp on the edges and golden brown on the top. Cookie should be firm on the top and fluffy on the insides.
Let cookies sit on sheet pan for a few minutes before removing them to a wire rack to firm up. Enjoy.
