Banana Muffins using Cake Mix
The Easiest Banana Muffins using only 4 ingredients including a box cake mix. Tastes just like a banana bread.

- 3 med-large bananas (very ripe)
- 1 (15.25oz) box yellow cake mix (just the dry mix)
- 2 large eggs (room temperature)
- 1 cup walnuts, chopped
Preheat oven to 350 degrees. Spray a 12 cup standard muffin tin with non-stick cooking spray or place liners into each cup.
In a large bowl mash up 3 medium to large bananas until smooth. Add in the box of dry cake mix, 2 eggs and walnuts. Mix together using a fork until well combined.
Using a 1/4 cup, measure out batter into each prepared muffin tin cups until all filled. (optional: Add chopped walnuts to top of batter.)
Bake on the center rack for 15-20 minutes until batter is cooked through. (I put a toothpick through the center of cupcake to check for doneness. Should come out clean or with a little crumb on it. If batter is on toothpick, bake a little longer.)
