Banana Pudding Truffles
A Small Bite Dessert with your favorite flavors of Banana Pudding. You won't believe this one.

- 60 vanilla (nilla) wafer crumbs (DIVIDED)
- 1/2 cup dry banana pudding mix
- 4 oz cream cheese, softened
- 1 tsp vanilla extract
- 2-3 TBS milk
- 10 oz bag white morsels or candy melts
- 1 TBS crisco shortening or coconut oil
Crush nilla wafers in food processor or place them in a ziploc bag and break into crumb size pieces. Reserve 1/2 cup for crumbs in a small bowl and set aside for later use in recipe. Place remaining nilla crumbs in a large mixing bowl. Add in softened cream cheese, dry banana pudding mix and vanilla extract.NOTE: soften cream cheese on a microwave safe bowl or plate for 15-20 seconds.NOTE: measure pudding mix then use rest to make a small batch of banana pudding if you wish. Using a spatula combine the ingredients in large mixing bowl adding milk a little at a time until a soft dough forms. NOTE: Don't over add the milk, go slow. You may only need 2-3 TBS. Roll mixture into 1" balls and place on a parchment covered sheet pan. Freeze for 20 minutes.
Melt white morsel chips in microwave. Place morsels in a microwave bowl with 1 TBS coconut oil or crisco shortening for 15 - 30 second intervals until smooth.
Using a spoon place each truffle into melted chocolate until covered, shake off excess and place back on sheet pan. Sprinkle on the reserved nilla wafer crumbs on top.
You can rest these on counter top for 30 minutes to set up. For faster results place in refrigerator or freezer until set up.
