Blueberry Butter Swim Biscuits

You will fall in love with these QUICK DELICIOUS BLUEBERRY BUTTER SWIM BISCUITS. Crispy edges, soft and fluffy insides, bursts of blueberries and a sweet glaze all swimming in luxurious butter.

Equipment

  • 8 x 8 baking dish
  • measuring cups & spoons
  • wire whisk
  • large mixing bowl

Ingredients

  • 2 cups all-purpose flour
  • 1 TBS baking powder
  • 1 TBS white granulated sugar
  • 1 tsp salt
  • 1 1/2 cups buttermilk
  • 1/2 cup butter (1 stick)
  • 1 1/2 cups fresh blueberries
  • 1/2 cup powdered sugar
  • 1-2 TBS milk

Instructions

  • Place 1 stick (1/2 cup) butter into an 8 x 8 baking dish. Place baking dish into oven. Turn oven on to preheat to 450 degrees. Once oven reaches 450 degrees, remove baking dish with melted butter and set aside.
  • While butter is melting in oven prepare biscuits.
  • In a large mixing bowl whisk together 2 cups all-purpose flour, baking powder, white granulated sugar, and baking powder.
  • Pour in buttermilk and whisk until a loose dough forms.
    NOTE: if you do not have buttermilk you can create it by adding 1 1/2 TBS lemon juice or white vinegar to a measuring cup. Fill measuring cup with regular milk to the 1 1/2 cup line. Stir with a fork. Let sit for 5 minutes and you have buttermilk to use for this recipe.
  • Add 1 cup of blueberries to batter and fold in with a spatula.
  • Spoon batter on top of melted butter in baking dish and spread evenly. Score dough with a knife to form 6 - 8 biscuits. Place more blueberries on top.
  • Bake in 450 degree oven for 25-30 minutes until golden brown and a toothpick inserted comes out clean. Let sit for a few minutes. Cut into squares.
  • Mix powered sugar and milk to create a drizzle. Pour over biscuits while warm. Remove biscuits to a serving platter and enjoy.
