Breakfast Hash Brown Casserole

Equipment

Ingredients

  • 1 medium green bell pepper, diced
  • 1 cup Jimmy Dean mild sausage
  • 1 medium yellow onion, diced
  • 6 large eggs
  • 12 oz can evaporated milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp smoked paprika
  • 30 oz frozen shredded hash brown potatoes, thawed
  • 2 cups cheddar cheese, shredded

Instructions

  • Preheat oven to 350 degrees. Grease a 9 x 13 baking dish with non-stick cooking spray.
  • In medium skillet over medium high heat, break up and brown breakfast sausage. Add in diced peppers and onions and cook until softened.
  • In a large mixing bowl whisk together eggs, milk, salt, black pepper, garlic powder, onion powder, and paprika.
  • Stir in thawed thawed hash browns, cheese, cooked sausage, peppers, and onions. Pour mixture into prepared baking dish. Bake for 1 hour in preheated oven until mixture is set in the middle.
  • Cool for 15 minutes to help set up. Sprinkle dried parsley on top. Cut into squares and enjoy.
