Spray the inside of crockpot with cooking spray.
In a large bowl, place all croissant pieces, diced cooked sausage, onions, peppers, and cheese. Toss well.
Place mixture into crockpot.
In same bowl, whisk 8 eggs, milk, salt, pepper, cumin, and paprika together.
Pour of croissant mixture in crockpot.
Cook with lid on for 6-8 hours, checking after 6 hours to make sure eggs are set and thoroughly cooked.
Serve and enjoy.
