Chicken Alfredo Sloppy Joe's
What a great sandwich made from one skillet meal. Using an alfredo instead of a tomato base.

- 1 TBS butter
- 1 medium yellow onion, diced
- 1 lb ground chicken
- 2 cloves garlic, minced
- 1 jar alfredo sauce
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup parmesan cheese, shredded `
- 1 tsp dried parsley
- 2 hamburger buns
- 2 TBS butter
In a large skillet over medium high heat melt butter. Add in onion and cook until softened.
Add in ground chicken to softened onion and cook until chicken is no longer pink and cooked through. NOTE: break up chicken until small pieces. Stir in minced garlic for 1 minute.
Stir in alfredo sauce. Let simmer for 5 minutes. Turn off heat & remove skillet from burner.
Stir in mozzarella & the parmesan cheese. Sprinkle with parsley.
Preheat oven to 450 degrees. Butter the insides of the tops & bottom s of the hamburger buns. Toast in oven until lightly golden brown.
Spoon alfredo sloppy joe's onto bottom bun and top with the top. Enjoy.
