Preheat oven to 400 degrees. Line a baking sheet with tinfoil and place a cooling rack on top.
In the 1st shallow bowl, season flour with salt & pepper.
In 2nd shallow bowl, whisk together eggs and 1 TBS syrup.
In 3rd shallow bowl, mix crushed flakes and salt & pepper to taste.
Dredge chicken tenders in flour, then place in egg mixture, and then coat with the frosted flakes. Place on to cooling rack on baking sheet, leaving space between each tender.
Place in preheated oven for 25 minutes until crispy and golden brown.
In a small bowl, mix mustard, the remaining maple syrup and honey.
Serve dipping sauce with chicken tenders.
