Chicken Tortilla Soup in Crockpot

Ingredients

lbs
boneless, skinless chicken breasts
1 (32)
oz box
Chicken Broth
2 (10)
oz cans
rotel tomatoes with green chilies
1
fresh lime juiced
1
TBS
minced garlic

TBS
taco seasoning
or 1 pkg taco seasoning. (Check out my blog recipe for homemade taco seasoning.)

tsp
cumin
to taste

cup
Heavy Cream
1 1/2
cups
Corn
frozen, or canned
garnishes (tortilla strips, avocado, cilantro, shredded cheese)
Salt & Pepper
to taste
Instructions
Place chicken, broth, rotel, lime juice, garlic, taco seasoning, corn, cumin, salt & pepper in crockpot.
Cover & cook on low for 8-9 hours or 5-6 hours on high.
Remove chicken and shred. Place back into crockpot and add heavy cream, cilantro, salt & pepper to taste.
Serve with desired garnishes.
