Chocolate & Peanut Butter Ooey Gooey Cake

Cake
- 2 sticks butter, melted (DIVIDED)
- 1 (15.25oz) box chocolate cake mix (I used Devil's Food)
- 3 large eggs, room temperature (DIVIDED)
- 1 (8oz) package cream cheese, room temperature
- 1 cup creamy peanut butter
- 2 cups powdered (confectioner's sugar) sugar
- 1 tsp vanilla extract
Topping
- 1 cup semi-sweet chocolate chips
- 1/2 cup creamy peanut butter
- 1/2 cup heavy whipping cream
Preheat oven to 350 degrees. Spray a 9 x 12 baking dish with non-stick cooking spray and set aside.
In a large mixing bowl mix together cake mix, one egg, and 1/2 cup melted butter. Pour mixture into bottom of prepared baking dish and pat down evenly.
In another large mixing bowl using an electric hand mixer beat cream cheese until softened. Beat in eggs one at a time.
Add in the powdered sugar 1 cup at a time. Mix in 1/2 cup melted butter until smooth.
Pour this mixture over the cake mix in prepared baking dish. Bake in preheated oven for 45-50 minutes until golden on top and slightly gooey in center of cake.
In a medium bowl place 1/2 cup peanut butter and 1 cup semi-sweet chocolate chips. In a small sauce pan bring 1/2 cup whipping cream to a simmer for 1 minute. Pour hot cream over the chocolate chips and peanut butter. Stir to combine. NOTE: (microwave 1 minute and stir and microwave another 1 minute and stir and that should help finish melting the chips, if needed.) Pour chocolate mixture over top of chocolate peanut butter cake and smooth evenly. Let sit on counter for 1 hour to set up before serving. Enjoy.
