In a large pot or Dutch oven melt 5 TBS butter. Mix in peanut butter and marshmallows until smooth. Turn off heat and remove from burner.
Stir in Rice Krispies until well coated. Let sit for 5-10 minutes until easy to manage.
Using a 1 1/2 inch cookie scoop place a mound of rice krispie mixture into the palm of your clean hand and flatten out into a disk shape.
Place 1 mini Reese's peanut butter cup in the center of the disk and form the disk around the peanut butter cup and roll into a round circle.
Place it on a parchment lined sheet pan. Continue with the rest of the snowballs.
Melt bark or white chips per instructions on back of package for microwave instructions.
Poke a toothpick through the snowball and swirl it through the melted bark until coated. Tap lightly on side of bowl to get excess off. Place covered snowballs back onto sheet pan.
Sprinkle blue sanding sugar or sprinkles on the snowballs before they set up.
Let sit on countertop or in refrigerator to set up. Enjoy.
