Preheat oven to 400 degrees.
In a large bowl, whisk together flour, baking powder, baking soda, and salt. Place the diced chilled butter into flour. Cut the butter into flour using 2 forks, a pastry cutter or you can use your hands. Flour should be crumbly with bits of flour throughout.
In a small bowl mix together buttermilk, egg yolk, and honey.
Pour buttermilk mixture into the flour mixture and using a wooden spoon combine until all flour is incorporated. Using your hands form a ball of dough and place onto a floured work surface.
Roll dough out to 1/2 " thick and around 8 inches round. Using a long knife cut the round dough into 8 triangles. Place the scone pieces onto a parchment lined baking sheet leaving 1/8 " in between each triangle.
Whisk egg white in a small bowl until frothy. Using a pastry brush coast the triangles with the egg wash.
Mix together cinnamon and white granulate sugar and sprinkle on top of the egg washed scone triangles.
Place baking sheet into preheated oven and bake for 10-12 minutes until golden brown and set on top. Pull out of oven and remove from pan on to a serving plate.
In a small bowl mix together glaze ingredients (powdered sugar, 1/2 tsp vanilla and milk until you reach a drizzly glaze. (To thin out glaze add more milk, to thicken glaze add more powdered sugar.)
Drizzle glaze all over the baked scones. Enjoy.
