Cocoa-Cola Roast in Slow Cooker
The moist tender roast with a delicious flavor using cocoa-cola. Change up the way you cook a roast.

6 quart crockpot
large skillet
- 3-4 lb chuck roast
- 2 TBS cooking oil (vegetable, olive, or avocado)
- salt & pepper
- 5 medium carrots, peeled and chopped
- 1 large yellow onion, peeled and chopped
- 2 ribs celery, chopped
- 1 1/2 lbs red potatoes, washed and chopped
- 3 cloves garlic, whole
- 1 (10oz) can cream of celery or mushroom soup
- 1 (10oz) can french onion soup
- 2 cups beef broth
- 12 oz cocoa-cola
- 1 TBS corn starch, as thickner
Heat cooking oil in a large skillet over medium high heat. Season top & bottom of roast with salt & pepper. Place roast into hot skillet. Allow to sear for 3-4 minutes until bottom is golden brown and has a crust. Flip over roast and sear for another 3-4 minutes until golden brown and has a crust. Sear each side of the roast for just 30 seconds. Remove roast from pan and place onto a plate. Add chopped vegetables (carrots, onions, celery, potatoes) to skillet and saute for 3 minutes. Add in garlic and saute another 1 minute.
In the bottom of the crockpot place 1/2 of the sauted vegetables. Lay the roast on top of the vegetables. Place remainder of the vegetables on top and sides of the roast.
In the same skillet with burner off, mix together soups (cream of celery, french onion soup, and beef broth) along with the cocoa-cola until well combined. Pour mixture over roast and vegetables in crockpot. Place lid on crockpot and cook on low for 8 hours or on high for 5-6 hours. Roast should be fork tender and cooked through. Vegetables should be tender as well.NOTE: Depending on the size and type of roast will determine how long of a cook time. Keep an eye on the final cook time and add additional time if needed to make sure roast is very tender. Remove roast and vegetables from crockpot and place on a serving platter. Mix 1/2 cup of liquid from crockpot with 1 TBS corn starch. Pour mixture into crockpot liquid and stir to thicken for a gravy to pour over the roast and vegetables. Enjoy.
