Creamy Chicken Alfredo Lasagna

Ingredients

  • 9 uncooked lasagna noodles
  • 1/2 TBS salt (for boiling noodles)
  • 1 cooked rotisserie chicken, diced small
  • 1 cup cottage cheese
  • 1 cup ricotta cheese
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp ground nutmeg
  • 1 large egg
  • 2 (15oz) each jars alfredo sauce
  • 5 oz parmesan cheese, shredded (DIVIDED)
  • 16` oz mozzarella cheese, shredded (DIVIDED)
  • extra Italian seasoning for garnish
  • fresh parsley, chopped for garnish

Instructions

  • Preheat oven to 375 degrees. Pour 1/2 jar of alfredo sauce into baking dish and spread evenly across the bottom and halfway up the sides.
  • Bring a large pot of salted water to a boil & add lasagna noodles. Cook per directions on back of package for al dente. Drain noodles and run under cold water to stop cooking process and cool down the noodles. Lay out noodles onto a parchment lined sheet pan.
  • In a large mixing bowl mix together diced cooked chicken, cottage cheese, ricotta cheese, salt, black pepper, garlic powder, Italian seasoning and nutmeg, egg, 1 1/2 jars of alfredo sauce, 1/2 cup parmesan cheese, and 1 cup mozzarella cheese.
  • Place 3 cooked lasagna noodles on bottom of prepared baking dish overlapping a little to fit.
  • Spread 1/3 of the chicken mixture on top of the lasagna noodles evenly.
  • Place another 3 lasagna noodles on mixture. Spread with 1/2 of the remaining mixture.
  • Top with final 3 lasagna noodles. Top with remaining mixture.
  • Sprinkle remaining parmesan cheese across mixture. Top with remaining 1 cup of mozzarella cheese. Sprinkle with Italian seasoning.
  • Cover baking dish with non-stick foil and bake in preheated oven for 30 minutes. Remove foil and bake an additional 10-15 minutes until cheese is fully melted and golden brown.
  • Let sit on counter for 10-15 minutes to pull lasagna together before serving. Garnish with fresh parsley.
