- 1/4 cup all purpose flour

- 1/4 tsp onion powder
- 8 oz mozzarella cheese, shredded (DIVIDED)
- 1/2 cup parmesan cheese, grated (DIVIDED)
- 2-2 1/2 cups chopped rotisserie chicken (or other type cooked chicken)
In a large pot of salted boiling water cook linguine per directions on back of package for al dente. Save 1 cup of pasta water before draining cooking pasta. Place cooked & drained linguine back in pot.
In a large skillet melt 4 TBS butter over medium high heat. Add in onion and cook 4-5 minutes until softened and slightly browned. Stir in 1 tsp garlic for 30 seconds.
Sprinkle 1/4 cup flour over the onions. Mix the flour into the onion for one minute. Pour in one cup chicken broth slowly while whisking.
Stir in salt, black pepper, garlic powder and onion powder until combined. Add in 1/2 cup of the saved pasta water & stir to combine. Stir in 1/2 of the mozzarella cheese and 1/4 cup of grated parmesan cheese.
Add in cooked chicken until everything is well combined. Pour the cheesy chicken mixture into the pot with the drained cooked linguine. Mix well to combine.
Spray a 9" x 13" casserole dish with non-stick cooking spray. Pour the tetrazzini mixture into casserole dish and smooth evenly.
Top with remaining mozzarella cheese and the parmesan cheese evenly.
Cover the casserole with foil. Bake in 350 degree preheated oven for 20 minutes. Remove foil and bake an additional 15-20 minutes until cheese is melted.
