Creamy Swiss Cheese Chicken
For a low carb high protein meal combine cooked tender chicken with a creamy sauce, melty cheese, and a crunchy, golden brown topping.

- 2 lbs boneless, skinless chicken breast cut into bite size pieces
- 1-2 TBS olive or avocado oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp smoked paprika
- 1/4 - 1/2 tsp black pepper
- 1 pinch salt (to taste)
- 1 (8oz block) cream cheese, softend
- 1 cup chicken broth
- 1/4 cup butter
- 2 cups pork rinds, crushed
- 1 cup parmesan cheese, shredded
- 7 slices swiss cheese
- parsley flakes (garnish)
Heat oil in a large deep skillet. Season chicken pieces with all the seasonings (garlic powder, onion powder, smoked paprika, black pepper, and salt) to coat evenly.
Place seasoned chicken pieces into prepared hot skillet in a single layer. Cook for 3-4 minutes until golden brown on bottom and partially cooked. Turn chicken over and cook an additional 3-4 minutes. Move chicken around and test a piece for doneness.
Once chicken is cooked through and no longer pink, add in cream cheese and chicken broth. Stir until smooth.
Place slices of cheese on top of the chicken & cream sauce evenly. Let simmer while making the topping.
In a medium skillet melt butter and bring to a sizzle. Stir in pork rind crumbs or pieces and the parmesan cheese until well coated. Press mixture into pan to crisp up for a minute.
Pour crumb mixture right on top of melted cheese in skillet. Sprinkle with parsley flakes. Let sit for a few minutes to thicken up.
