Creamy Tomato Chicken Skillet

Juicy chicken simmered in a smooth tomato based sauce. Tangy, creamy, cheesy and perfect for an easy weeknight meal.

Equipment

Ingredients

Cooking Chicken

  • 4 boneless skinless chicken thighs or thin breast cutlets
  • 2 TBS olive oil
  • 1/2 tsp each salt, pepper, garlic powder, onion powder, and paprika

Making Creamy Tomato Sauce

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/4 tsp each salt, pepper, garlic powder, onion powder, and paprika to taste
  • 1 (14oz) can diced tomatoes with juice
  • 2 oz canned diced green chilis optional
  • 1 cup heavy whipping cream
  • 3 fresh basil leaves, cut into strips
  • 1/2 cup parmesan cheese, shredded

Instructions

  • Place chicken in a bowl and mix well with 1 TBS cooking oil and 1/2 tsp each of salt, black pepper, garlic powder, onion powder, and paprika. Mix well to coat chicken with seasonings.
    NOTE: go less on the salt, if needed.
  • Heat a large skillet over medium high heat. Place chicken in hot skillet flatten down in one layer. Cook on one side until golden brown and half way cooked through. 5 minutes or so.
  • Turn chicken over and finish cooking until golden brown and juices run clean. (5 minutes or so)
    NOTE: use a thermometer in the thickest part of chicken and should read at least 165 degrees for doneness.
    NOTE: add more cooking oil if needed after flipping chicken to keep from drying out.
  • Remove chicken from skillet onto a plate and set aside. Leave oils in skillet for flavoring rest of dish.
  • Add diced onion to skillet and cook until softened 3-4 minutes. Stir in garlic and cook one additional minute.
  • Stir in diced tomatoes with juice, diced green chilis (opt), heavy whipping cream and black pepper, garlic powder, onion powder, and paprika. Season with salt to taste.
  • Stir in fresh basil. Let simmer a few minutes. Add chicken back into skillet and spoon sauce over the chicken. Simmer for 5 minutes. Chicken should be cooked through and tender.
  • Top with additional strips of fresh basil and grate fresh parmesan cheese on top.
