Crockpot Queso (Cheesy) Chicken

Absolutely Perfect for Crunchy Tacos, Tortillas or even over rice. So Delicious.

Equipment

  • 6 quart crockpot

Ingredients

  • 4-6 skinless, boneless chicken breasts
  • 3 TBS homemade taco seasoning or 1 pkg taco seasoning from store (visit my homemade recipe through SEARCH)
  • 1 (8oz) pkg cream cheese cut into slices
  • 1 (10oz) can rotel tomatoes (or substitute 1 can regular diced tomatoes for less heat)
  • 16 oz Queso quesadilla cheese shredded
  • Optional: Favorite taco toppings

Instructions

  • Spray 6 quart crockpot with non-stick cooking spray.
  • Place chicken in bottom of crockpot.
  • Sprinkle chicken with taco seasoning.
  • Place sliced cream cheese over the top of the chicken.
  • Pour can of rotel tomatoes over cream cheese.
  • Sprinkle queso cheese over the tomatoes.
  • Cover crockpot with lid and cook on high for at least 3 hours or on low for 6-7 hours until chicken is cooked through and tender. Shred chicken in the crockpot with 2 forks or use a meat chopper.
  • Serve in hard taco shells with favorite toppings or on a soft tortilla or over rice.
