Cuban Sandwich Casserole
Love these flavors from an old classic "Cuban" sandwich. Add pasta to pull the casserole together.

- 1 (12oz) package egg noodles (uncooked)
- 1/2 TBS salt
- 4 cups cooked & seasoned pulled pork (non-sauced)
- 1 1/4 cups heavy whipping cream (DIVIDED)
- 1 1/2 cups diced ham (DIVIDED)
- 2 cups shredded swiss cheese (DIVIDED)
- 1 cup dill pickles, diced (DIVIDED)
- 1/4 cup + 1TBS Dijon mustard (DIVIDED)
- salt & pepper, to taste
- 1/3 cup mayonnaise
- 1 TBS mustard
Preheat oven to 400 degrees. Grease a 9 x 13 baking dish and set aside.
Cook egg noodles per directions on package in a large pot of salted boiling water until al dente. Drain and leave in pot.
In a large deep skillet place cooked, seasoned pulled pork and start breaking it apart and heating it through. Stir in 1 cup of heavy cream, 1 cup shredded swiss cheese, 1/4 cup (or 4 TBS) Dijon mustard, 6 oz diced ham, 1/2 cup diced pickle, salt & pepper.NOTE: pulled pork can be found in grocer's deli section with prepared foods.NOTE: you can also make your own pulled pork for this recipe. I have a YouTube recipe at Catherine's Plates called Sweet & Spicy Pulled Pork (adjust seasonings to your taste). Turn off burner and stir in cooked noodles to coat. Pour mixture into prepared baking dish evenly. Top with remaining cheese (1 cup), ham (6oz), and pickles (1/2 cup).
Bake in preheated oven for 15-20 minutes until cheese has melted and golden brown.
In small bowl whisk together mayonnaise, 1 TBS Dijon, 1 TBS yellow mustard, and 2-4 TBS of heavy cream to form a drizzle consistency. Drizzle on top of cooked casserole. Enjoy.
