- 7 large eggs
- 1/2 cup cottage cheese (substitute heavy cream or milk)
- 1/2 cup diced green bell pepper or any color
- 1/2 cup diced yellow onion
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/2 lb diced ham (I used Frick's)
- 2 green onions, sliced
- 4 oz shredded cheddar cheese
Preheat oven to 350 degrees. Spray a 12 cup standard muffin tin with non-stick cooking spray thoroughly.
In a large bowl crack 7 eggs. Add in cottage cheese and seasonings. Whisk until thoroughly mix together.
Spoon diced ham into bottom of the 12 prepared muffin tin cups. Spoon diced peppers and onions on top of the ham. Top with shredded cheese.
Spoon egg mixture into cups to fill to top line of each muffin tin cup. Top with sliced green onions on each one.
Bake in preheated oven for 18-22 minutes until golden brown and cooked through. Allow to rest a few minutes before removing the egg bites to a serving platter.
To freeze: Cool completely and place into ziploc freezer bags for up to 2 months. Remove 1-2 and microwave for 60-90 seconds until heated through to the center. Break open to heat faster.
