Doritos Chicken Casserole

Yes, we are using Nacho Cheese Flavored Doritos in this one. Baked chicken and delicious pantry items.

Equipment

Ingredients

  • 2 cups shredded & cooked chicken breasts

use search button to find my "Baked Chicken" recipe to use for this recipe. You can also make your own chicken or use a rotisserie chicken as long as it's cooked prior.

If using a rotisserie or other cooked chicken for this recipe add 2-3 TBS of taco seasoning blend in with the ingredients to give that Mexican flavor.

  • 1 cup sour cream
  • 1 (10 oz) can rotel tomatoes, drained
  • 1 (14 oz) can corn, drained
  • 2 (10.5 oz) cans cream of chicken soup
  • 1/2 cup milk
  • 2 cups shredded cheddar or other favorite cheese
  • 1 family size bag Doritos, Nacho Cheese Flavor
  • 3 sliced green onions, for garnish
  • 1 pkt taco seasoning, to use if preparing your own chicken or using a rotisserie chicken

Instructions

  • Preheat oven to 350 degrees. Spray a 9 x 13 baking dish with non-stick cooking spray.
  • In a large bowl combine cooked shredded chicken, sour cream, rotel tomatoes, corn, cans of soup, milk, and 1 cup of shredded cheese.
  • Crush 2 handfuls of Doritos into bottom of prepared baking dish. Spoon half of the chicken mixture onto the crushed Doritos evenly. Sprinkle 1/2 of the remainder of shredded cheese onto the chicken mixture.
  • Crush another 2 handfuls of Doritos on top of the shredded cheese. Spoon remainder chicken mixture on top of the crushed Doritos evenly. Sprinkle with remainder of shredded cheese. Top with another 2 handfuls of crushed Doritos.
  • Bake in preheated oven for 15 minutes until cheese is melted and casserole heated through. Top with green onions, if desired.
